Brain Food Breakfast

We all know the importance of starting our day with a nutritious breakfast. But did you know that not all healthy food is created equal when it comes to fueling your brain?

I’m sharing with you my favorite brain food breakfast which consists of exactly what your hard working noggin needs! 🙂

  • 1 Arnold Multi-Grain Sandwich Thin
  • 1 tsp. extra virgin olive oil
  • 1/2 c. egg whites (I use the egg whites from the carton)
  • 1 avocado, sliced
  • Salt & pepper
  1. Preheat the extra virgin olive oil in a small nonstick skillet over medium to medium-high heat. Add egg whites and cook until desired consistency. Season with salt & pepper to taste.
  2. While the egg whites are cooking, toast the sandwich thin to desired crispness.
  3. Place cooked egg whites on each half of the sandwich thin. Top with avocado slices and more salt & pepper. Enjoy!
